These buttery, crumbly cookies are an irresistible treat that’ll melt in your mouth. With their soft texture and the added touch of redcurrant jelly or your favorite filling, they are the perfect indulgence for any occasion. They’re quick to prepare, bake in just 12 minutes, and are sure to become a go-to favorite in your baking repertoire.

Ingredients

  • 250g soft butter
  • 1 egg
  • 50ml oil
  • 100g powdered sugar
  • 1 packet vanilla sugar
  • 50g corn starch
  • 2g (1/2 teaspoon) baking powder
  • 1 pinch of salt
  • 400g all-purpose flour
  • Redcurrant jelly or filling of your choice (raspberry jam, lemon curd, etc.)

Instructions

1. Prepare the Dough

In a large mixing bowl, begin by combining the soft butter and egg. Use a hand mixer or whisk to beat them together until smooth and creamy. Next, add the oilpowdered sugar, and vanilla sugar, continuing to mix until the ingredients are fully combined.

2. Add Dry Ingredients

Stir in the corn starchbaking powder, and a pinch of salt. Gradually add the flour, mixing a little at a time to avoid any lumps. The dough should come together easily, becoming soft and slightly sticky but still smooth.

3. Shape the Cookies

Once your dough is ready, divide it into small portions, about 18-20g each. Roll each portion into a ball and place them on a baking sheet lined with parchment paper.

4. Create the Hollow for the Filling

To create a well in the center of each dough ball, use the handle of a wooden spoon or your thumb. Press gently to form a small hollow that will hold the jelly or filling. Be sure not to press too hard, as you want the cookies to retain their shape.

5. Add the Filling

Fill each hollow with a small amount of redcurrant jelly (or your choice of fruit jam, lemon curd, or other fillings). Just a little will do, as too much may spill out during baking.

6. Bake

Preheat your oven to 180°C (350°F). Bake the cookies for 12 minutes or until they are lightly golden around the edges. They should remain soft in the middle, creating that perfect crumbly texture.

7. Decorate

Once out of the oven, allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack. If desired, decorate with a light dusting of powdered sugar or even a drizzle of icing for an added touch of sweetness.

Enjoy!

These cookies are perfect for holiday baking, afternoon tea, or just whenever you need a quick, satisfying treat. The combination of soft, buttery dough and the sweet filling makes them utterly addictive. You’ll find it hard to stop at just one—these are the kind of cookies that disappear fast!

If you’re looking for a way to bring these cookies to the next level, consider experimenting with different fillings or adding a bit of finely grated lemon zest to the dough for a citrusy twist.

Happy baking, and enjoy the soft, crumbly goodness that’s sure to become a tradition in your kitchen!
